Fabien Jouves – Capsule

Capsule from Fabien Jouves is a funny wine. It was probably meant to become a pet-nat but the sugars didn’t fully turn into CO2 and alcohol resulting in an off-dry and slightly sparkling wine. We were blown away by the rich and aromatic flavours. Lots of stuff in there like stone fruits, yellow apple, dried fruits and honey. It has an oxidative note, creaminess and a lovely bread-y finish. Made us wonder wether the grapes had a bit of botrytis.

Tip: Serve it with a cheese platter!
